Vegan Breakfast Ideas
I recently had a few guests here that were interested in a vegan breakfast. They said if it were vegetarian it would be fine, but I needed to go the extra mile and come up with a few treats for them during their stay. My thought with vegan food, don't try to find the infamous "TOFURKEY" or other things that try to resemble something in the non-vegan world. I find that I am never satisfied and it always fails for me. I've been a chef for quite a few years and I thought I would post a list of some things that I have made here. These are just ideas with a short description.

Vegan Breakfast Ideas
1. Black Rice Bowl with Dried Fruit and Pistachios –
Talk about power breakfast. I have taken black rice and other grains combined and topped it with a blend of macerated dried fruit. I finished it off with pistachios and drizzled it with honey. What a flavor combination. Be creative with your grains; I found that the black rice created a wonderful contrast in color with the fruit.
2. Spinach Bread–
Just like Grandma use to make. Make your own pizza dough using just yeast, sugar, pinch of salt water and flour. Then saute fresh drained spinach in olive oil with fennel, garlic, onions, black olives, coriander, salt and pepper. Once dough has risen, place the cooled spinach mixture on the dough and roll up. Bake in 350' oven till golden brown.
3. Pancakes –
Thats right... you can have vegan pancakes without the eggs and butter. There are many substitutes for eggs; canned bean broth, ground flax seed and water, mashed bananas and honey. All are good depending on your taste. Once you add your substitute it will behave differently when cooking. Be sure to follow your directions and all other ingredients. Rule of thumb, be sure that when pouring pancakes on your griddle that it is hot. Use coconut oil as a substitute for butter. Top with your favorite topping.
4. Polenta –
Another Italian favorite. I love making this at breakfast time; there is so much you can do with it. I begin by making a firmer polenta, allow it to cool over night in refrigerator and then take slices the next morning and saute in olive oil. You can simply top with honey and fresh fruit and be done. Or strawberries and cashews; blueberries and pistachios; spinach and onions. There are so many different things you can top this with.
5. Grilled Pineapple –
Pineapple is nice because of its versatility. You can slice it and grill it like a "steak" The natural sugars will soon caramelize and create a wonderful flavor contrast. Top with a berry sauce and granola and the flavor and contrast profile will delite all your guests.
6. French Toast –
Yes, you can! For this you'll want to use a firmer style bread. And for the egg dip, use chickpea juice. Three tablespoons count for one egg. It's pretty simple. Just be sure that your pan is hot. Let the bread brown on both sides and be sure to use a very flat spatula to get under your French toast on the griddle.
7. Baked Oatmeal –
A simple recipe but an all time favorite. Any recipe you find on line will be fine. I like to add almond milk and the chickpea juice as substitutes.
